چکیده
     قارچ شیتاکه (Lentinula edodes) از لحاظ میزان تولید جهانی رتبه دوم را داراست. این قارچ دارای طعمی بی‌نظیر است و به ‌دلیل خواص دارویی مورد توجه قرار می‎گیرد. شیتاکه به‌طور مرسوم روی چوب‌های سخت مرده پرورش می‌یابد. از سوی دیگر، هرساله صدها هزار تن مواد زاید کشاورزی سوزانده یا دور ریخته می‌شود. این امر می‌تواند منجر به آلودگی زیست‌محیطی ‌شود. بنابراین، در این آزمایش از کاه گندم، کاه جو، کاه ارزن و کاه برنج غنی‌شده با کنجاله سویا و خاک‌ارّه (10، 20 و 30 درصد) به‌منظور ارزیابی سرعت رشد رویشی قارچ شیتاکه استفاده شد. این تحقیق به‌صورت طرح فاکتوریل در قالب طرح کاملاً تصادفی در پنج تکرار انجام شد. نتایج نشان داد که بیشترین سرعت رشد رویشی در بستر کاه جو غنی‌شده با 10 درصد پودرکنجاله سویا (1/5 میلیمتر در روز) اتفاق افتاد. با وجود این، کمترین میزان رشد در بستر کاه برنج غنی‌شده با 30 درصد پودر کنجاله سویا (6/1 میلیمتر در روز) مشاهده شد. در مجموع، در تمامی تیمارها میزان رشد رویشی با افزایش سطح کنجاله سویا، کاهش یافت.

Lentinula edodes is the second largest producer in the world. This fungus has a unique taste and is considered for its medicinal properties. Shitake is traditionally grown on dead hardwoods. On the other hand, hundreds of thousands of tons of agricultural waste are incinerated or disposed of every year. This can lead to environmental pollution. Therefore, in this experiment, wheat straw, barley straw, millet straw and rice straw enriched with soybean meal and sorghum (10, 20 and 30%) were used to evaluate the growth rate of Shitake mushroom. This study was conducted as a factorial design in a completely randomized design with five replications. The results showed that the highest vegetative growth rate occurred in the bed of barley straw enriched with 10% soybean meal powder (5.1 mm per day). However, the lowest growth rate was observed in the substrate of rice straw enriched with 30% soybean meal powder (1.6 mm.day). In general, in all treatments, the rate of vegetative growth decreased with increasing the level of soybean meal.
